What You Need
  • 2 Ripe Hass avocados the only variety worth using
  • 1 Lime — juice only keeps it bright and slows oxidation
  • ¼ Red onion, finely diced rinse in cold water to mellow the bite
  • 1 Jalapeño, seeded and minced keep seeds for more heat
  • 2 tbsp Fresh cilantro, chopped
  • ¼ tsp Sea salt
  • ¼ tsp Ground cumin optional but recommended — earthy depth

How to Make It
  1. 01
    Prep the aromatics
    Finely dice the red onion — go small, about ¼ inch. Rinse the diced onion under cold water for 30 seconds and pat dry. This removes the harsh sulfur bite and keeps it from overpowering the avocado. Seed and mince the jalapeño.

    Halve and pit the avocados
    Cut each avocado in half lengthwise around the pit. Twist to separate. Remove the pit. Score the flesh in a crosshatch pattern with a knife, then scoop into a bowl with a large spoon.
    💡 Leave it slightly chunky at this stage — it'll get worked down as you mix.

    Mash and season
    Add lime juice immediately — this is not optional, it prevents browning and adds brightness. Mash with a fork to your preferred texture: chunky or smooth. Fold in red onion, jalapeño, cilantro, salt, and cumin.

    Taste and serve
    Taste and adjust: more lime for acidity, more salt to sharpen everything, more jalapeño for heat. Serve immediately — or press plastic wrap directly against the surface and refrigerate. Drop the avocado pit into the bowl to help slow oxidation.
    💡 Best eaten fresh. If it browns slightly, just scrape the top layer and you'll find bright green underneath.
